Ageing on large slopes produces well-developed pieces, with specially marbled slices of soft fat and unique aromas of Mediterranean essences, and a deep, mineralised palate.
Impossible to achieve without this unique ageing and slow natural curing.
Limited edition because we seek quality over quantity, and we only take out about 120 pieces a year.
Thin slices vacuum packed for better preservation.
