Our organic 100% iberian cebo de campo ham is an intense red colour, crossed with soft and unctuous streaks of fat with pearly tones.
As with the acorn-fed batches, it is from our father and mother of the same breed, not crossbred, only Iberian.
It is aged for a minimum of 2 years, feeding on the natural resources of our farm, fresh pastures, figs, wild olive trees, etc… With a supplement of organic grain such as wheat, barley and chickpeas to compensate for the dry pastures in summer.
Indeed, the natural feed and the long ageing in mountain pastures confer Mediterranean essences and mineralised and intense palates.
Thanks to its slow artisan drying process, it concentrates the flavours of the high sierras, with a taste of the dehesa in each slice.
Limited edition because we seek quality over quantity, and we only take out about 120 pieces a year.
A real reference in its sector only reserved for a privileged few…
